Easy Pasta Salad

What a hot day! On days like today, I try my best to avoid the oven/stove–we don’t like to run the A/C (especially this early in the season), and the oven makes the kitchen hot, hot, hot! Days like today also make me think of yummy pasta salad.

Nothing says summer like a cool pasta salad!

There are many variations to this recipe — explore your options! I chose a few favorites to add to the mix.

My recipe today:
1 box of Rotini pasta
1 can large black olives, sliced
1 tomato, diced (I used a Lapp Family Farms tomato)
1/2 cucumber, diced very small (I used a cucumber from Lockbriar Farms)
Cheese cubes to taste (I used Eve’s Cheese Italian Colby – my favorite variety)
1 bottle Italian salad dressing (my choice was Newman’s Own robust Italian)
*feel free to experiment by making your own dressing! I do on occasion, but today it was all about fast, easy preparation!

1. Boil water, add pasta, cook pasta (8-10 minutes for Rotini)
2. Drain pasta and let it cool
3. Add salad dressing, add ingredients
4. Serve and enjoy!

I like making the whole box so we have enough for leftovers. It usually lasts us three days.
