Peach Salsa

Oh yes I did. I made this delicious chunky peach salsa. And you should, too.

This was delicious. And easy to make, too! After picking up some gorgeous white peaches from Lockbriar Farms at the Farmer’s Market, I knew I wanted to make something special.

The special ingredient? Mint!
Here’s what I used: mint, ginger, lemon juice, peaches, corn, onion
Dice the peaches first…make sure to save the juice! That’s the best part.

Dice almost everything, mix in a bowl, and serve! It’s that simple.
It makes enough for four servings. Or, three if you munch while you cook! hehe.
Placed over grilled local chicken – perfect pair!

Fit with Aundra’s Peach and Corn Salsa

You will need
2 medium-sized peaches, peeled and diced (you could leave the peels on the peaches – your call!)
1/4 small white onion, diced
1/4 c. corn, cooked
1 tbsp. lemon juice
1 tsp. ginger
a handful of fresh mint leaves, chopped

1. Mix all ingredients in a bowl and serve. Enjoy! Makes four servings.
